Ingredients for Thandai Phirni:

The celebrations are incomplete without some delicious delicacy, and the festival of colours;Holi is no exception. On Holi, there’s no limitation on sweet recipes to try, ranging from kheer to Ghevar. This chilled firni is a very refreshing dessert that combines the traditional Indian dessert Phirni with Holi’s famous coldness. Here is the list of Ingredients:

1.Thandai Powder: 3 Tablespoons 

 It will be added to the Phirni to make it Holi special. Thandai powder can be made at home or store-bought can be used as well. 

2.Rice: 3 Tablespoons 

Take Basmati rice to make it rich and more textured. Other rice aromatic and flavoursome varieties like Ambemohar, Indrayani and Gobindo Bhog can also be taken.

3.Milk: 1 and ½ :litres

 To make it more traditional (creamy and rich) take full-fat milk. To make it vegan vegetarian milk such as almond milk, oats milk, or coconut milk can be used. It tastes so good in almond milk.

4.Dry fruits: Accordingly.

5. Saffron: 15-18 Strands

Saffron is the main ingredient for the Phirni so why not use it in our thandai phirni. It gives a delicious and rich flavour and adds an orangish tint to our dessert. 

6.Sugar: ¼ cup sugar 

Sugar can be added according to the taste. 

7.Ghee: 1 teaspoon 

8:Green Cardamom: 4-5

Instructions:

Phirni is made by boiling the milk together with rice or rice flour. In this mixture dry fruits, nuts and Kesar are boiled together. This formula is infused every byte with freshness, making it rich and creamy. That is why it is a perfect choice for Holi and even for summer. Try this quick and easy recipe for this Holi 2024:

  • To create cold firni, take rice and rinse them well and soak water for 30 minutes.  
  • Take ghee in a heavy-based pan on medium heat.
  • Pour the milk when ghee begins to boil.
  • To make it thick, stir it to prevent it from scorching at the bottom.
  • In the meantime, extract the water from the soaked rice.
  • Now blend rice with minimum water and  make a coarse paste.
  •  Now add rice paste, sugar,thandai powder, saffron soaked in milk ,etc in the boiling milk and stir until the mixture thickens and the milk should be reduced to half. 
  • After 30-40 minutes as the milk has thickened, turn off the heat and let the firni cool.
  • Remember that Phirni will thicken more after it cools. 
  • Now keep the Phirni in terracotta pots to enhance the flavours.
  • Add chopped nuts, dried rose petals and silvers as garnish and keep it in the refrigerator to chill down for 3-4 hours. 
  • Serve out delicious phirni chilled.
